  1. Mix mashed potatoes, tomato paste, mustard, parsley, dill, lemon zest in a bowl.
  2. Add salmon chunks and mix but don’t over mix and drastically break the salmon, season. Create 4-5 cakes and set aside
  3. Create an assembly line of flour, egg and breadcrumbs. Dip the cake in the flour and dust off, then the egg and the breadcrumbs. Fry the cakes for 5 minutes on each side on medium heat
  4. Place on absorbent paper and serve. For sauce I mixed mayonnaise and red Tabasco sauce (it is really good)
