In a large bowl, combine the flour, sugar, cinnamon, baking soda and salt. Add the eggs, oil, carrots and vanilla; beat until combined. In a large bowl, whisk together flour, salt, baking soda, and cinnamon. I like using all-purpose flour, but you can substitute some of the all-purpose flour for whole wheat or white whole wheat flour.

Steps to make Carrot cake:
  1. Preheat the oven to gas mark 4
  2. Grease a 18 cm cake tin and line with baking parchment
  3. Sift the flour baking powder and spices in to a large bowl
  4. Add sugar, zest, walnuts and grated carrots then stir
  5. Stir in the beaten eggs and oil and mix well
  6. Bake for 1 hour
  7. While the cake is cooking make the icing
  8. Top with the icing and ur done

I like using all-purpose flour, but you can substitute some of the all-purpose flour for whole wheat or white whole wheat flour. For a gluten-free carrot cake, swap the flour for your favorite gluten-free flour blend. Baking soda helps the cake to rise. Salt, cinnamon, and vanilla extract make the cake taste amazing.
