Stir in egg and vanilla until mixture is blended. NOTE: (Some people add ¼ cup mini chocolate chips to make richer, I did not).

  10. Prepare 3-4 tablespoons Icing Sugar for coating

These are best served the same day, as the confectioners' sugar becomes absorbed by the cookie giving it a pasty look. This can be fixed by dusting the cookies with sugar again. Because these cookies crack on top, my granddaughter thinks I make a mistake when I bake them—until she takes a bite! For those who are having trouble with the top cracking, here's a tip: Place your cookie sheet on the second to-the-top rack and only bake one cookie sheet at a time.

Instructions to make Cracked Chocolate Cookies:
  1. Preheat oven to 180C. Line 2 baking trays with baking paper.
  2. Beat softened Butter, Caster Sugar and Brown Sugar until smooth and well combined. Beat in Egg and Vanilla, and mix well.
  3. Combine Self-Raising Flour, Cocoa Powder and Bi-Carb Soda, and add to the Butter & Egg mixture. Mix to combine, then add chopped Dark Chocolate OR Dark Chocolate Chips, and combine evenly.
  4. Roll the dough into 24 balls, about 3cm size, and roll them over Icing Sugar to coat well. Place on the prepared trays, 12 balls each.
  5. Bake for 15 to 20 minutes or until cooked through. Transfer to a wire rack to cool.

Because these cookies crack on top, my granddaughter thinks I make a mistake when I bake them—until she takes a bite! For those who are having trouble with the top cracking, here's a tip: Place your cookie sheet on the second to-the-top rack and only bake one cookie sheet at a time. The "crinkle" in this recipe's name comes from their distinctive crackle-top. The look is achieved through the transformation of sugar-coated dough balls into distinctively textured cookies.
