Brown the meat, then discard the grease. Meat Filling: Heat the oil in a large pot. When pork is cooked remove fat from pan. Fill with the meat mixture, then top with the other pie crust.

  1. Sauté the onions.
  2. Add the meat, strained.
  3. When all the juices are absorbed add the wine and the tomato paste.
  4. When only the oil remains in the pot, add the garlic, salt, pepper, cinnamon, clove and nutmeg.

  6. Let everything boil for a while.
  7. Remove the pot from heat and let it cool.
  8. Then, add the kefalotyri mixed with the egg. The filling is ready.
  9. Place a filo sheet in the baking tray, spread the filling and then, cover with the top filo sheet. Brush it with oil, sprinkle with water and score lightly.

When pork is cooked remove fat from pan. Fill with the meat mixture, then top with the other pie crust. Prick the top crust a few times with a knife to vent steam. A great deep dish meat pie made with potatoes, carrots and peas in a rich gravy. Lamb chicken or pork can be used in place of beef.
