The ingredients needed to make Apple & Ginger Cake:
  1. Make ready (about 2 medium) cooking apples, peeled, cored & chopped
  2. Prepare unsalted butter or baking fat
  3. Make ready soft brown sugar
  4. Make ready large eggs
  5. Prepare Golden Syrup
  6. Get self raising flour
  7. Prepare ground ginger
Steps to make Apple & Ginger Cake:
  1. Pre-heat the oven to 180C/Fan 160/Gas 4 - Grease & line a 20cm cake tin with baking paper.
  2. Beat the butter & sugar together until light & fluffy then mix in the eggs one at a time. Beat in the syrup.
  3. Sift in the flour & ginger & fold in to the mixture then fold in the apple.
  4. Pour the mixture into the prepared tin & bake for 1 hour 20 minutes. Check with a skewer or tip of a knife, if it comes out clean it is ready.
  5. Allow to cool in the tin for 10 minutes then place on a wire rack to finish cooling.
