In a large pot, add the sweet potatoes and cover with cold salted water. Bring them to a boil over medium heat. Lower the heat and simmer until you can pierce each potato with a paring knife and there is little to no resistance, approximately. Sweet potato skins contain fiber and other nutrients.

  1. Heat a grill pan up over a medium heat and place the chicken on for 10 mins, turning every couple of minutes

  3. Add in the red pepper, peas, sweet corn and garlic, oregano and salt and pepper and stir to combine. Leave to cook for 3 mins stirring occasionally.
  4. Stir in spring onions into the veggies and sweet potato for last two minutes
  5. Check the chicken is cooked and then serve with mustard for extra flavour.
