Add rice, return to boil, stir. Cover pot and reduce heat to simmer. While rice cooks, thread chicken onto skewers and discard marinade. Push your fried rice to one side, add the eggs in and mix it through with the rice.

Instructions to make Chicken Satay with rice:
  1. Start cooking your rice. Dice chicken breast and transfer into a bowl, press one garlic to the bowl, add one spoon of soy sauce and mix well. - Heat up a pan with some oil and start frying.
  2. Chop spring onion, ginger, lemon grass and chilli into small pieces and transfer it all into a grinding bowl. Press the rest of the garlic to the bowl, add two spoons of soy sauce and 1 1/2 spoons of fish sauce and smash it all into a paste.
  3. Now add two big spoons of the peanut butter and smash it again.
  4. Now put rice into the bowl, top it with the chicken and leave the sauce on the side. Enjoy!

While rice cooks, thread chicken onto skewers and discard marinade. Push your fried rice to one side, add the eggs in and mix it through with the rice. Once all combined, remove the pan from heat and sprinkle some spring onions, coriander and ground white pepper to taste. *If you were to serve this dish on its own, It will be delicious served with some slices cucumber and a wedge of lime. In a small saucepan over medium heat, combine lemongrass and coconut milk. Bring to a boil, then remove from heat and let cool for at.
