Right at the end when the risotto is ready, add a splash of chicken broth to make the risotto to make it slightly soupy, then take it off the stove. Heat oil in a large frying pan and saute onion until translucent. Add chicken and cook until browned. Add rice and stir until all the grains are coated with oil.

  1. Fry onion in a little oil or butter (I used the oil from the homemade chicken stock)
  2. Add mushrooms. Fry a little.
  3. Add rice and 2 cups stock, a little salt(only a little at first as cheese and worcestershire sauce will also add saltiness!), pepper, worcestershire sauce and herbs to taste and bring to boil whilst stirring.
  4. Keep adding a ladle of stock and cooking down till stock is used up and rice is cooked (this may take 15 minutes). Add extra water if rice is still not done to your liking.
  5. Crumble up some cheese into the risotto, and stir through till melted. Check seasoning.
  6. Enjoy! Eat by itself or with a little green salad. It's comfort in a bowl! :)

Add chicken and cook until browned. Add rice and stir until all the grains are coated with oil. Pour in chicken stock, add mushrooms and fold through. Place the stock into a medium saucepan and place over a medium heat. Bring to a simmer, and then remove the pan from the heat and cover with a lid to keep hot.
