The ingredients needed to make Chicken Fry Roast:
  1. Prepare 500 g Chicken, small pieces /Full chicken / drumstick (choice)
  2. Take 2 medium Onions chopped
  3. Prepare 1/2 tsp Turmeric powder
  4. Get 1/2 Tbsp Kashmiri Chilli powder
  5. Get 🌻To be roasted and ground blended into a powder:
  6. Prepare 1 Tbsp Coriander seeds
  7. Make ready 1/2 tsp Cumin seeds
  8. Prepare 5-6 Dry red chillies
  9. Make ready 3 Green Cardamom
  10. Prepare 4-5 Cloves
  11. Make ready 1/2 tsp Funnel seeds
  12. Make ready 2 small Cinnamon stick
  13. Get 10-12 Whole peppercorns
  14. Make ready 6 Garlic cloves
  15. Take Salt to taste
  16. Make ready 3 Tbsp Oil
  17. Get 10-12 Curry leaves
  18. Prepare 2 Tbsp fresh Coriander leaves chopped
  19. Prepare 1 lemon Juice

Line a baking sheet with heavy duty aluminum foil and lay the patted-dry chicken on the foil, breast side up. Use your fingers to smear the butter mixture all over the chicken, under the skin, and inside the cavity. Cut the lemons in half and squeeze the juice of one lemon all over the chicken. Make sure to note how much your bird weighs, as this determines how long to roast a chicken in the oven.

Instructions to make Chicken Fry Roast:
  1. 🌻To make the masala powder: - Take a pan and add the coriander seeds, cumin seeds and dry red chillies. Dry roast the spices on low heat for 2-3 mins. Add peppercorns and the whole garam masala, mix and continue to roast on low heat for another 1 mins. Lastly add the garlic cloves and roast on low heat for 1-2 minute. Remove the spices to a plate and let it cool. - Grind/ blend it to a fine powder. Set aside. - Chop the onions and the coriander leaves.
  2. Take a pan and heat 3 tbsp ghee. Add the chopped onions and fry on medium heat till light brown in colour. - Add the turmeric and Kashmiri Chilli powder, mix and fry on low heat for 1 minute.
  3. Add the chicken, mix and fry on high heat for around 5 mins if you are use full chicken so fry 10-20 mins.Add the salt, mix and cover and cook on low heat for around 20 mins. The chicken will release water and will also get cooked. Remove the cover and give a stir few times. - - After this increase heat to medium and make sure the masala from getting burnt.
  4. Add the chopped coriander leaves and curry leaves, mix and continue to fry on low heat for around 3 mins. - Lastly add the juice of lemon, mix and switch off heat. - Enjoy !!!

Cut the lemons in half and squeeze the juice of one lemon all over the chicken. Make sure to note how much your bird weighs, as this determines how long to roast a chicken in the oven. Set the chicken in a shallow roasting pan, breast side up. Tie the drumsticks together with cooking twine so the chicken keeps its shape and to ensure even cooking without overdrying the limbs.
