The ingredients needed to make Chicken Korma:
  1. Make ready 1/2 kg Chicken full cut into pieces
  2. Make ready 3/4 cup Oil / ghee
  3. Take 2 Onion cut into thin slice
  4. Take 2 large Black cardamom
  5. Take 3-4 Green cardamom
  6. Prepare 5-6 Cloves
  7. Make ready 3-4 Black pepper corns
  8. Get 1 Star anise
  9. Take 2 small Cinnamon sticks
  10. Make ready 1/2 tsp cumin seeds
  11. Make ready 2 Bay leaves
  12. Get 2 Tbsp Ginger garlic paste
  13. Prepare 1 tsp Salt or to taste
  14. Make ready 1 tsp Paprika powder / red Kashmiri chilli powder
  15. Make ready 2 Tbsp Coriander powder roasted & crushed
  16. Take 2 tsp Red chili powder or to taste
  17. Make ready 1/2 cup boiled Water or as required
  18. Prepare 1 cup beaten natural plain Yogurt
  19. Prepare 1/4 tsp Nutmeg powder
  20. Prepare 1/4 tsp Mace powder
  21. Prepare 1/4 tsp Garam masala powder
  22. Take 1/2 tsp Butter)
  23. Prepare 1 tsp Kewra water
  24. Make ready Ginger julienne for garnishing (optional)
  25. Take Coriander for garnish
Steps to make Chicken Korma:
  1. In a pot add oil / ghee add black cardamom,green cardamom,cloves,black pepper corns,star anise,cinnamon sticks,cumin seeds,bay leaves and fry for 1 minute. - Add onion fry until golden brown - Add ginger garlic paste and fry well.
  2. Add chicken and fry until chicken changes color,Add salt,paprika powder,coriander powder,red chili powder,and fry well till all chicken water dry then add beaten yogurt and fry well for 2 minutes. - add nutmeg powder,mace powder,mix well and add 1/2 a cup boiled water or as required cook korma for low flame 15-20 minutes or till chicken is fully cooked and all oil / ghee comes up the surface.
  3. Turn off the flame and Sprinkle garam masala, add kewra water and butter cover with lid for 5 minutes. - Garnish with ginger julienne and Coriander served with naan, roti, pitta bread or rice. - Enjoy !!!
