Instructions to make Hummus & grilled veggies crostini:
  1. In an oven tray, place the diced bell peppers & cherry tomatoes, toss them in olive oil, sprinkle salt & pepper, grill these for 5 minutes. (We need to retain the crunch, just need the veggies slightly roasted).
  2. Next, place the eggplant slices in the oven tray, again drizzle olive oil, sprinkle salt & pepper & grill for 7 mins. Turn the eggplants upside down in between. Once grilled, roughly chop them and keep aside.
  3. Carve the bread, and cut equal sized crostinis out of the baggette and place on the oven tray. Drizzle a bit of olive oil and grill the bread to just slightly toast it for 2-3 mins and take out.
  4. Now we just need to assemble the dish. Take the crostini, smear a generous helping of the hummus, add grilled veggies on top, chopped olives, chopped rocket leaves and finally few pine nuts on top! Enjoy the treat!
