  1. Heat the oil in a large saucepan. Sauté the onion, carrot and celery over a medium heat until softened and lightly golden. - - Stir the Thyme leaves and Bay leaf into the lentils and then add the red wine. - - Simmer until the wine has almost been fully absorbed.
