Just a random idea I had and also an experimentation: kani mayo on a bed of rice with deep fried scallops on top. There are other ways to batter and fry the scallops too (e.g. flour egg and breadcrumb) if you prefer.

  1. Take Cooked rice
  2. Make ready Kani Mayo
  3. Make ready 125 g Crabsticks
  4. Prepare Japanese mayonnaise (Kewpie brand)
  5. Prepare (opt) 1 tbsp sesame seed oil
  6. Take (opt) 1 tbsp sushi soy sauce
  7. Make ready (opt) 1/2 tbsp oyster sauce
  8. Take Coarse black pepper
  9. Take Fried scallops
  10. Take Handful scallops, salted
  11. Get 1 cup Buttermilk
  12. Take 1 cup flour (or a mixture of plain, rice and corn flour)
  13. Prepare 1 tsp smoked paprika
  14. Take 1 tsp onion powder
  15. Take 1 tsp garlic powder
  16. Take Salt and pepper

To serve, carefully peel away the lettuce leaves and line a large platter with the lettuce cups. Crab stick, shrimp roe with mayonnaise. Bean curd with crab meat & mentai mayonnaise. Batter-fried shrimp, scallops, fish, kani stick and assorted vegetables.

Instructions to make Fried scallop and kani mayo don:
  1. To cook rice: Wash the rice till water is clear then cook it with the water level 1 inch above the rice.
  2. Boil some water with 1 tbsp of salt sprinkled in, cook the crabsticks for 5 min. Drain the water.
  3. Shred the crabsticks with a fork.
  4. This is optional: mix the shredded crab with 1 tbsp sesame seed oil, 1 tbsp sushi soy sauce and 1/2 tbsp oyster sauce. Compulsory: Add 2 tbsp of Japanese mayonnaise (or just drizzle it all over) and mix.
  5. Dry and salt the scallops for a while before soaking in buttermilk for a few min.
  6. Mix flour, smoked paprika, onion powder, garlic powder, salt and pepper. Dredge the scallops in the flour mixture till fully covered. You can pour the scallops into a colander to separate from the flour.
  7. Fry the scallops in oil over medium heat for about 3min or golden brown.
  8. Fill a bowl with the cooked rice, drizzle with mayo, spread a layor of the kani mayo, sprinkle lemon pepper (or coarse black pepper), add the fried scallops on top. Makes 2 bowls.

Bean curd with crab meat & mentai mayonnaise. Batter-fried shrimp, scallops, fish, kani stick and assorted vegetables. Grilled fresh water eel served with tamago, Japanese pickles, rice and sweet eel sauce. The pork belly don was just lukewarm when i collect and the sashimi seems like has been put outside for a while (a little watery the tuna fish). Shrimp tempura inside, Kani, mayo, eel sauce, crunchy on top.
