Sieve again and set aside. Place the caster sugar and the egg white in a bowl over a bain-marie making sure this doesn't touch the water, and whisk by hand to a syrup consistency. This shouldn't take more than 5 minutes until the sugar is melted.
  2. Transfer in another bowl and start whisking first on medium then on high speed to stiff peaks. Once you reached the desired consistency, start by adding the almond and icing sugar mixture and mix with a spatula. This method is called macaronage and will ensure that excess air is out of the batter to reach a smooth and thin consistency.
  3. Pour the mixture in a piping bag and pipe on a baking try lined either with parchment paper or a silicone mat. Tap the tray on the kitchen side to eliminate excess air and use a toothpick for any air bubble you may see. Let rest the macarons before baking between 20-40 minutes - weather dependant may be more. Bake at 140 C for about 12-17 minutes. Move on a cooling rack for 10 minutes before decorating.
  4. For the buttercream start by whisking the butter first until fluffy, add the sieved salt, icing sugar and matcha powder and keep whisking until the right consistency.
