  2. Take the almonds out of the oven, cool for a few minutes then use a coffee grinder to powder the almonds. - Combine the vanilla extract and almonds to the mixture and blend gently with your mixer. - In another bowl blend your sifted flour and baking powder and gradually add to the butter mixture and gently combine with your fingers until you have a soft dough. - Break off some of the dough and shape your kourabiedes how you like.
  3. Turn your oven down to 180C and place the kourabiedes on parchment paper lined baking trays and cook in the oven for about 15 mins but keep checking that you don’t overcook them, you are looking for a slightly faint golden brown colouring. - Remove from the oven and let them cool right down before even trying to move them as they may break. - Present onto a serving plate and dust liberally with the remaining icing sugar.
