  1. Sieve the flour add salt, mustard powder and cayenne. Dice butter into small cubes and rub in until fine breadcrumb texture. If it’s a hot day or you have hot hands you might need to refrigerate to prevent butter from softening.
  2. Grate both of the cheeses (keeping a tiny bit back for topping) Stir lightly into the breadcrumb mixture. Make a well, add in egg yolk and a couple of tbsp of cold water. Cut in with a round bladed knife. To form a dough. Add a tiny bit more water to help combine if necessary.
  3. Wrap and chill for a 5 minutes.
  4. Roll the mixture between two sheets of baking parchment to form a thick rough square about 2cm deep. Sprinkle with remaining cheese and more cayenne if you like them spicy.
  5. Cut into 2cm wide sticks
  6. Bake in preheated oven at 190c for 10-15 minutes or until golden brown and cooked through.

Spread with half of the butter. Spicy cheddar cheese straws are the perfect make-ahead dish for the holiday season. You can make the dough ahead of any Christmas party and bake them just before your guests arrive, and they also make an excellent hostess gift. These low carb cheese straws are melt in your mouth deliciousness and utterly addictive. Made with almond flour they are also a great gluten free cheese straw recipe.
