The ingredients needed to make Mel’s Pansit Bihon:
  1. Prepare 3/4 of a pack of Boneless and Skinless Chicken Thighs
  2. Take 2 packs Tesco Raw King Prawns
  3. Make ready 1 Onion sliced
  4. Prepare 4 cloves Garlic chopped
  5. Make ready 1 inch Ginger sliced thinly
  6. Take 4 packs (50 g) Glass Vermicelli Noodles
  7. Get 4 sticks Celery sliced thinly
  8. Get 3 Carrots sliced thinly
  9. Take 1/2 Cabbage chopped coarsely
  10. Make ready Seasoning with Ground Black Pepper and Splash of Fish Sauce and a tad Soy Sauce
Instructions to make Mel’s Pansit Bihon:
  1. Boil some water and pour in the glass vermicelli to soften them for a 10-15 minutes. Set aside and start sautéing.
  2. Sauté onions, garlic and ginger.
  3. Add chicken thighs and cooked until brown and tender.
  4. Add the chopped and sliced celery and carrots. Cooked for a few minutes then add the glass noodles to the pan and lower the heat then stir gently and occasionally. Then add some ground black pepper.
  5. Finally, add the chopped cabbage and then the prawns and cooked together until colour has changed and it’s cooked. (myself, I used lettuce as I cooked whatever ingredients I have left in the fridge - waste not… - but really cabbage should be used).
  6. Switch off heat and garnished with spring onions and stir gently. Set its aside for 10 minutes (so the noodles was soaked throughout and flavour all mixed).
  7. Enjoy it a splash of lemon juice. Xx
