Steps to make Tumeric Scrambled Eggs:
  1. On a low to medium heat place a medium non stick saucepan. It's important that it is non stick so that the eggs don't catch. Place in the butter and allow to melt.
  2. In a small bowl quickly beat the eggs add the tumeric and season with pepper, beat until well combined.
  3. Add the eggs to the saucepan and allow to sit for around 15-20 seconds and then using the rubber spatula give it a good mix. Now, to achieve the perfect soft scrambled eggs it's important to keep stirring it as it slowly cooks, just allowing it to rest every few seconds. As soon as the eggs begin to clump together more remove from the heat and keep mixing to keep a silky smooth texture.
  4. Season with a little salt and serve. If you want garnish with chopped spring onion and a little parsley. Other garnishes that work well are chopped chives or red chilli flakes if you prefer a touch of heat.
  5. Note: If you wish to add a touch of luxury, simply add a small splash of single cream when beating the raw eggs.
