  17. Get 1-2 tsp chicken seasoning powder/salt

  19. Take Water, broth or liquid added should be enough to cook the rice. Adjust liquid depending on the amount of rice

As the name indicates this tomato rice is made using tomatoes alone and no vegetables are used except onion. A popular South Indian rice recipe, tomato rice can be made easily with leftover rice, tomatoes and a bunch of spices. You can easily whip up this tomato rice recipe in a pressure cooker or an instant pot. You can experiment with the flavours and ingredients of the dish to end up with your own version of tomato rice.

Instructions to make Tomato Rice:
  1. Wash and soak A for 10mins. Prep the rest of the ingredients.
  2. B - Start by heating the wok. Add butter and oil. Sauté the rest of the ingredients in B until fragrant.
  3. C - Then Add C. Stir and mix well. Add soaked rice. Stir and mix well again for few minutes. Transfer into rice cooker pot. Leave the pot on the stove over low heat until the water slightly gone. Then transfer the pot into rice cooker and press cook button.
  4. Use chopstick to fluff the rice once the rice cook. Let it cook further by leaving the ‘keep warm’ button on until the rice is soft and nice. Serve hot with pineapple salad, chicken in spicy sauce or chicken in thick tomato sauce.

You can easily whip up this tomato rice recipe in a pressure cooker or an instant pot. You can experiment with the flavours and ingredients of the dish to end up with your own version of tomato rice.
