  1. Combine all seasonings in a small bowl.
  2. Place Eggs, Chives and 1 pinch Salt in a bowl and lightly whisk. The cooked rice should be warm. If you use cold left-over cooked rice, warm it in the microwave.
  3. Heat Oil in a large frying pan or wok. When the Oil is hot, add the egg mixture, which should start cooking immediately, and add warmed rice. Cook stirring, add seasoning mixture and combine well.

Toss well to combine, then press down evenly into skillet. Crack in eggs, stirring quickly to scramble eggs with vegetables.
