Steps to make Tzatziki:
  1. Peel the cucumber
  2. Use a spoon to de-seed the cucumber halves
  3. Grate the cucumber into a sieve
  4. Add a teaspoon of salt to the cucumber and mix well -this will drain excess water from the cucumber. Leave to stand over a bowl while you make the dip
  5. Crush 3 garlic cloves
  6. Chop a handful of fresh mint leaves
  7. Add the yoghurt to a bowl along with the garlic and mint
  8. Add the lemon juice and olive oil
  9. By now the cucumber is well drained and can be added to mixture. Season with pepper and mix well
  10. Serve with fresh bread
