The ingredients needed to make Casserole with dumplings:
  1. Make ready 500 g diced stewing beef
  2. Get 1 onion sliced
  3. Get 3 cloves garlic - chopped or minced
  4. Prepare 1 red chilli - chopped
  5. Make ready Chopped fresh vegetables- I used 2 carrots, 1 courgette, 1 leek, about 50g mushrooms and a handful of small tomatoes (these were vegetables I had to hand)
  6. Make ready 1 tablespoon mixed dried herbs
  7. Make ready 750 ml stock (I used half and half red wine and vegetable stock cube in water)
  8. Prepare 3-4 tablespoons olive oil
  9. Prepare Salt and pepper to taste
  10. Prepare Dumplings
  11. Make ready 100 g Self- raising flour
  12. Take 50 g vegetarian suet
  13. Take 1/4 teaspoon salt
  14. Get 5-6 tablespoons cold water
Steps to make Casserole with dumplings:
  1. Hear olive oil in a frying pan and brown the meat for 5 minutes
  2. Add chopped onion, minced garlic,chilli and mixed herbs and cook for a further 2-3 minutes.
  3. Remove from heat and add to a casserole dish or deep oven-safe pan. Add vegetables and stock. Stir and cover. Place in oven at 150 degrees centigrade and cook for at least 3 hours.
  4. Make dumplings - combine self-raising flour, suet, pinch of salt, and enough cold water to make a dough (about 5 tablespoons). Divide into 8 and shape into balls.
  5. After 3 hours remove casserole from the oven, add the dumplings, replace lid and cook for a further 30 minutes. Remove lid and cook for s further 10 minutes (this crisps the outside of the dumplings).
  6. Serve as is, or with chopped parsley garnish and green beans.
