  1. Take Ready rolled shortcrust pastry

  5. Make ready 3 large portobello mushrooms chopped
  6. Prepare 1 tbsp thyme leaves
  7. Make ready 20 g basil sliced
  8. Prepare 50 g nduja (or any cooked meat / cured meat)
  9. Get 5 eggs
  10. Prepare 300 ml single cream
  11. Take 120 ml milk
  12. Take 2 handfuls grated cheese (whatever you’ve got)
  13. Make ready Seasoning
Instructions to make Quiche - with whatever’s in the fridge:
  1. Preheat the over to 180 degrees centigrade. Roll the pastry out into a quiche dish or shallow pie dish. (I don’t have a quiche tray so I used a pie dish). Pierce the pastry base with a fork place a sheet of baking paper and baking beads on top. Blind Bake in the oven for 15 minutes
  2. While the pastry is baking, fry the onions, garlic and leek until soft.
  3. Add the thyme, mushrooms and seasoning and fry until the mushrooms are soft. Then remove the veg from the pan and quickly fry the nduja.
  4. Add the cream, eggs, milk, seasoning and cheese to a jug and whisk together.
  5. Place the veg and nduja into the pastry case. Then cover I the egg mix.
  6. Bake in the oven for 25 minutes or until brown on top
