The ingredients needed to make Slow cooker lamb:
  1. Take 1 medium red onion
  2. Get 1 leek
  3. Take 2 medium carrots
  4. Prepare 50 g button mushrooms
  5. Get 6 new potatoes (or 3 regular potatoes)
  6. Prepare 1 rolled breast of lamb
  7. Take 6 sprigs fresh thyme
  8. Get 400 ml lamb stock
  9. Take 1 tbsp vegetable oil

  1. In a frying pan cook the onion leek and mushrooms until softened and just taking on colour. Add these to the slowcooker.
  2. Then in the same pan seer the outside of the lamb to brown on all sides. Add the part cooked lamb to the slow cooker.
  3. Add the thyme, chopped carrots and chopped potatoes around the meat. Pour in the stock.
  4. Cook for about 5 hours so the meat becomes meltingly tender.
